# Instructions:
01 - Set the oven to 425°F (220°C) to prepare for roasting.
02 - In a large mixing bowl, combine halved baby potatoes, sliced bell peppers, and red onion. Add olive oil, minced garlic, oregano, thyme, smoked paprika, salt, black pepper, and optional red pepper flakes. Toss thoroughly to coat evenly.
03 - Spread the seasoned vegetables evenly on a large rimmed baking sheet. Nestle the Italian sausages among the vegetables.
