01 - Bring a large pot of water to a boil. Separate the boiling water into heatproof bowls based on how many colors are being used.
02 - Add food coloring gel to each bowl, stirring thoroughly until the desired shade is reached.
03 - Divide noodles into equal portions and cook each portion in its respective colored boiling water. Reduce boiling time by 2–3 minutes compared to package instructions. Drain noodles and rinse under cold water to halt cooking.
04 - In a medium saucepan over moderate heat, melt the butter. Add cream cheese and stir continuously until the mixture is smooth.
05 - Gradually incorporate milk, parmesan, cornstarch, salt, and white pepper into the saucepan. Cook, whisking non-stop, until sauce is thick and creamy—approximate duration is 5 minutes.
06 - Add colored noodles to the cloud sauce, gently folding to evenly coat. Arrange to maintain distinct colors for a cloud effect, or swirl lightly for a marbled pattern.
07 - Transfer to serving plates. Top each portion with sliced scallions, toasted sesame seeds, and edible flowers or microgreens if desired. Serve immediately.
