# Instructions:
01 - In a large mixing bowl, combine soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, and gochujang until well blended.
02 - Add thinly sliced beef, chicken, or tofu to the marinade, tossing until all pieces are coated. Let stand for 15 to 20 minutes to infuse flavors.
03 - In a blender or food processor, combine cooked ube, sour cream or yogurt, lime juice, honey or maple syrup, and a pinch of salt. Blend until a smooth, vibrant mixture forms. Refrigerate until ready to use.
04 - Heat a skillet or grill pan over medium-high heat. Add marinated protein and sauté for 4 to 6 minutes, stirring occasionally, until browned and cooked through. Transfer to a plate and set aside.
05 - Heat tortillas in a dry skillet or microwave until soft and pliable. For bowls, fluff the cooked rice with a fork.
06 - For tacos, spread a layer of ube crema onto each tortilla, then add cooked protein. Top with kimchi, cabbage, cucumber, jalapeño, cilantro, sesame seeds, and pickled onions. For bowls, layer rice in each bowl, arrange toppings as desired, and finish with a drizzle of ube crema.
