Black Currant Popsicles (Print)

Tangy, refreshing frozen treats bursting with bold blackcurrant flavor. Perfectly sweetened summer delight ready in minutes.

# Ingredients:

→ Fruit Base

01 - 2 cups blackcurrant juice, unsweetened, fresh or bottled
02 - 1/2 cup granulated sugar
03 - 2 tablespoons fresh lemon juice

→ Optional

04 - 1/4 cup whole blackcurrants, fresh or frozen

# Instructions:

01 - Combine blackcurrant juice and sugar in a small saucepan. Warm gently over medium heat, stirring constantly until sugar completely dissolves, approximately 3 to 5 minutes. Do not allow mixture to boil.
02 - Remove saucepan from heat and stir in fresh lemon juice. Allow mixture to cool to room temperature before proceeding.
03 - If using whole blackcurrants, divide them evenly among popsicle molds.
04 - Pour cooled blackcurrant mixture into molds, leaving approximately 1/4 inch space at the top for expansion during freezing.
05 - Insert popsicle sticks into each mold and transfer to freezer. Freeze for minimum 4 hours or until completely solid.
06 - Run warm water briefly over the exterior of molds and gently pull out frozen popsicles.

# Pro Tips:

01 -
  • They taste like summer captured in ice, with that tart-sweet blackcurrant punch that makes your mouth sing.
  • Five minutes of actual work means you spend more time enjoying them than making them.
  • Naturally vegan and gluten-free, so everyone at the table can have one without asking questions.
02 -
  • Never skip the cooling step—pouring warm mixture into molds will start melting the sides and create an uneven freeze.
  • Blackcurrant juice varies wildly in quality and tartness, so taste yours before committing to the sugar amount; you can always add more but you can't take it back.
03 -
  • Unsweetened blackcurrant juice makes a dramatic difference—sweetened versions will throw off the balance and make your popsicles cloying.
  • If a popsicle sticks stubbornly, run the mold under warm water for a few seconds longer rather than yanking it—patience prevents broken popsicles.
